That really depends on the cut of meat. Lamb cutlets, for example, are best cooked hot and fast, either on the bbq grill, pan or in the oven.
Lamb leg, on the other hand, benefits from a lower temperature and longer cooking times, as do lamb shanks. When roasting and slow cooking, try seasoning and searing your meat cut first.
