Smoky BBQ Salmon & Vegetable Skewers

Fire up the barbie or pop it under the grill — these smoky salmon skewers are a clean, high-protein dinner that’s bursting with flavour. Threaded with tender salmon chunks and charred veggies, they’re the kind of quick weeknight meal that works no matter the weather. Weeknight winner any time of the year.

  • 2 salmon fillets, cut into chunks
  • 1 red capsicum, cut into chunks
  • 1 zucchini, sliced
  • 1 red onion, cut into wedges
  • 1 tbsp olive oil
  • 2 tsp Smoky Salmon Rub
  • Bamboo skewers (soaked in water)

Method

  1. In a bowl, toss the salmon and veggies with olive oil and Smoky Salmon Rub.
  2. Thread onto skewers, alternating ingredients for max colour and flavour.
  3. Cook on a hot BBQ or grill plate for 8–10 mins, turning once, until salmon is just cooked and veggies are charred.
  4. Serve with lemon wedges and your side of choice.

  • Add a squeeze of lemon over the skewers before serving for extra freshness.
  • For a gluten-free side, pair with a crisp green salad or grilled corn.
