Ingredients
Serves 4
- 1 tablespoon oil
- 300g chicken mince
- 2 tablespoons Raptor Naturals Blazing Tex Mex
-
- Extra teaspoon of Raptor Naturals Blazing Tex Mex for the beans
- 400g can of black beans, drained
- 1/4 cup chicken or vegetable stock
- 2 tomatoes, sliced
- 1 cup grated cheese
- 4 tortilla wraps
Optional: 1 Tbsp sriracha (If you like some heat)
Garnish: Toasted sesame seeds and sliced spring onion.
Method
- Start by heating a frying pan with some oil. Either mince your leftover chicken or use chicken mince along with 2 tablespoons of Raptor Naturals Blazing Tex Mex and cook for about 5 minutes, breaking up any clumps as the mince cooks. Once done, remove from the heat and set aside.
- Next, place the drained black beans, chicken or vegetable stock, and 1 teaspoon of Raptor Naturals Blazing Tex Mex into a food processor or use an immersion blender to blend everything together until smooth. Set this black bean puree aside.
- To prepare the wraps, take one tortilla and make a cut from the center of the tortilla up to the top edge.
- Spread the black bean puree on the top left quarter of the wrap. Arrange the tomato slices on the bottom left quarter, then add the cooked chicken mince to the bottom right quarter. Sprinkle the grated cheese on the top right quarter.
- Fold the wrap, starting with the black bean quarter over the tomato section, then fold over the chicken, and finally fold over the cheese. The cheese side should end up on the outside.
- Heat the folded wrap in the frying pan on medium heat, placing the cheese side down first. Cook for about 2 minutes, until the cheese is melted and the tortilla is golden. Flip and cook for another 2 minutes on the other side. Repeat with the remaining wraps, and serve whole or cut in half and enjoy!
