Ingredients:
- 4 Large Kumara (Sweet Potatoes)
- 400g Beef Mince
- 2 tablespoons Tex Mex Seasoning
- 1 Green Capsicum, diced
- 1 medium Onion, finely chopped
- 2 tablespoons Tomato Paste
- 1/2 cup Corn Kernels
- Baby Spinach Leaves (for salad)
- 2 medium Tomatoes, diced (for salad)
Method:

Roast the Kumara
- Preheat oven to 200°C (390°F).
- Wash the kumara, prick them with a fork, and place on a baking tray. Roast for 40-50 minutes, or until tender. This step can be done ahead of time and stored in the fridge.

Cook the Filling
- Heat a pan over medium heat and sauté the onion until softened.
- Add the beef mince and Tex Mex seasoning, cooking until browned.
- Stir in the capsicum, tomato paste, and corn. Simmer for 5-7 minutes until well combined. Let cool, then portion out if prepping for the week.

Assemble the Stuffed Kumara
- When ready to serve, reheat the kumara in the oven or microwave, cut them lengthwise, and gently mash the flesh to create a cavity.
- Spoon the pre-made Tex Mex beef mixture into each kumara.

Prepare the Salad
- Toss baby spinach leaves and diced tomatoes in a bowl. Keep the salad undressed if prepping ahead, and add olive oil and lemon dressing just before serving.

- Enjoy immediately or pack portions of stuffed kumara and salad into meal prep containers for easy, ready-to-go lunches or dinners.
Tips:
- The beef filling and roasted kumara can be stored separately in airtight containers in the fridge for up to 3 days.
