Serves: Makes 4 meals!
Ingredients:
- 2 Chicken Breasts, grilled with Tex Mex seasoning and sliced
- 2 cups Mexican Rice (recipe below or pre-made)
- 1 cup Corn, grilled or cooked
- 1 cup Black Beans, drained and rinsed
- 1/2 cup Pickled Jalapeños
- 1 cup Guacamole (store-bought or homemade)
- 1 cup Salsa (mild, medium, or spicy, as preferred)
- 1/4 cup Fresh Coriander (Cilantro), chopped
- 1 cup Sour Cream
- 1 Lime, cut into wedges
- Nacho Chips, for crunch and garnish
For the Mexican Rice:
- 1 cup Long-Grain Rice
- 1 tablespoon Oil
- 1 teaspoon Tex Mex seasoning
- 2 cups Chicken or Vegetable Stock
- 1/4 cup Tomato Paste
- 1/4 cup Diced Tomatoes
- Heat oil in a saucepan over medium heat. Add rice and Tex Mex seasoning, stirring until lightly toasted.
- Add stock, tomato paste, and diced tomatoes. Bring to a boil, cover, and simmer for 15 minutes or until liquid is absorbed.

Prepare the Ingredients
- Grill chicken breasts with Tex Mex seasoning until cooked through. Slice thinly.
- Prepare Mexican rice, corn, black beans, and other toppings.
