Serves: Makes 4 meals!

Ingredients:

  • 2 Chicken Breasts, grilled with Tex Mex seasoning and sliced
  • 2 cups Mexican Rice (recipe below or pre-made)
  • 1 cup Corn, grilled or cooked
  • 1 cup Black Beans, drained and rinsed
  • 1/2 cup Pickled Jalapeños
  • 1 cup Guacamole (store-bought or homemade)
  • 1 cup Salsa (mild, medium, or spicy, as preferred)
  • 1/4 cup Fresh Coriander (Cilantro), chopped
  • 1 cup Sour Cream
  • 1 Lime, cut into wedges
  • Nacho Chips, for crunch and garnish

For the Mexican Rice:

  • 1 cup Long-Grain Rice
  • 1 tablespoon Oil
  • 1 teaspoon Tex Mex seasoning
  • 2 cups Chicken or Vegetable Stock
  • 1/4 cup Tomato Paste
  • 1/4 cup Diced Tomatoes
  1. Heat oil in a saucepan over medium heat. Add rice and Tex Mex seasoning, stirring until lightly toasted.
  2. Add stock, tomato paste, and diced tomatoes. Bring to a boil, cover, and simmer for 15 minutes or until liquid is absorbed.

Method:

  1. Prepare the Ingredients

    • Grill chicken breasts with Tex Mex seasoning until cooked through. Slice thinly.
    • Prepare Mexican rice, corn, black beans, and other toppings.
  2. Assemble the Burrito Bowls

    • Start with a base of Mexican rice in each bowl.
    • Arrange the grilled chicken, corn, black beans, guacamole, salsa, and sour cream in sections on top of the rice.
    • Add jalapeños and nacho chips for extra flavour and crunch.
  3. Garnish and Serve

    • Sprinkle chopped coriander on top.
    • Add a lime wedge to each bowl for squeezing before eating.
