Lime and chilli BBQ corn on the cob

Ingredients

  • 4 tablespoons of soft butter
  • 2 tablespoons of Lucky Kentucky spice rub
  • Juice and zest of 1 lime

Method

  1. Soften the butter and mix in the Lucky Kentucky spice rub, lime zest and juice until the butter tastes spicy, salty and limey.
  2. Smother the corn in the butter, wrap in foil and chuck on the bbq.
  3. When the corn is tender and slightly charred serve with more butter and lime wedges.
