Lime and chilli BBQ corn on the cob
Ingredients
- 4 tablespoons of soft butter
- 2 tablespoons of Lucky Kentucky spice rub
- Juice and zest of 1 lime
Method
- Soften the butter and mix in the Lucky Kentucky spice rub, lime zest and juice until the butter tastes spicy, salty and limey.
- Smother the corn in the butter, wrap in foil and chuck on the bbq.
- When the corn is tender and slightly charred serve with more butter and lime wedges.
